We take a lot of pride in our wine, and because of that we are constantly learning new ways to produce high quality wine. With this latest vintage we borrowed a technique from Champagne, France. This uses red grapes and processes them to produce a white wine. A unique climatic condition is required that prevents red pigmentation of the white flesh of the grape berry.
This does not happen every year. The grapes must be fermented without the skins.
The result is a wine which is dry and medium to full bodied bodied with a smooth mouth feel and a steely acitity. This wine is extremely food friendly,. We are recommending you serve it at room temperature. It should appeal to both white and red wine lovers.
